Easter Brunch Recipe: Strawberry Crepes (and Kid Friendly!)

Today, we are sharing a great "kid-friendly" and "adult-friendly" easy Easter brunch recipe:  Strawberry Crepes!  I would love to have a nice two hour relaxing brunch out, but with two little boys who can hardly sit still...this sounds completely exhausting, especially for the price of Easter brunches!  So the past few years our Easter meals after church have been at home enjoying the holiday in the comfort of our home!

Strawberry Crepes
(modified from Betty Crocker!)

Ingredients:
1 1/2 cups all-purpose flour
1 1/2 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
2 eggs
2 cups milk
2 tablespoons melted butter
1 teaspoon vanilla
Desired fillings/toppings:  Strawberries, Bananas, Nutella, Syrup, Chocolate Syrup, Whipping Cream, Jam, Etc.

Directions:
1.  Mix flour, sugar, salt, and baking powder salt in bowl.  Stir in remaining ingredients and mix until smooth.
2.  Spray skillet with cooking spray.  Heat over medium heat.
3.  Pour 1/4 cup of batter into skillet.  Rotate skillet until thin layer of batter covers bottom.  Cook until light brown on one side and then flip until cooked on other side.
4.  Prepare crepe with desired fillings/toppings!

This happened to be our dinner last night, so Andrew, our toddler, had his crepe "toddler friendly":
 

But then I started to get a little more creative for Aiden...how about turning your crepes into a little Easter bunny?!?!  The possibilities could be endless and I would have loved to get more creative! (if it wasn't for two hungry children waiting at the table for me and crepes still cooking on the stove!)

I haven't made crepes in awhile, but I may have to start again!  They were delicious and there are so many creative options out there, thanks to Pinterest I have an endless amount to try!

  2. The bunny is so cute. Isn't it fun to do these kiddie stuff with food? Relax isn't a word in your vocabulary when you have little children. LOL Thank you for sharing this recipe. I always was afraid to try crepes. To make them, thinking they will tear all apart.
