Friday Favorites: Easy Crock Pot Light Beef Stew

You might remember a few months ago I created "Easy Crock Pot Chicken" from an array of ingredients lying around my pantry. I have a new easy crock pot recipe to share! 
I wanted to make beef stew for dinner (I had gotten stew meat at Whole Foods on sale). We've been trying to eat healthy & the thought of a heavy, creamy beef stew didn't seem to fit our healthy weekly dinner menu. I wanted to try & come up with a lighter version of the stew I usually make. This is what I put in the crock pot & it was delicious! 
Easy Crock Pot Recipe: A Lighter Beef Stew
Ingredients:
Uncooked Diced Stew Meet
1 Cup Beef Broth
1 Can Cream of Mushroom Soup
3 Cups Water
3 Peeled & Diced Carrots
1 Cup Frozen Peas
1 Package of Sliced Fresh Mushrooms
1 onion peeled & cut in half
 
Directions: Brown stew meat on all sides. Add browned stew meat & all other ingredients to the crock pot. Cook on high for about 4 hrs. I served it over egg noodles, but you could also serve it as a soup. Enjoy!
